Ingredients

  • 3/4 stick margarine
  • 1/4 lb. fresh mushrooms
  • 3 medium onions
  • 2 lb. sirloin cubes or strips
  • 3 Tbsp. cornstarch
  • garlic
  • salt
  • 2 1/2 cups water
  • 1/2 cup vinegar
  • 3 tsp. beef bouillon or 3 bouillon cubes

Instructions

  1. Melt margarine in a large saute pan.
  2. Saute mushrooms, onions, and garlic. Remove from pan with broth remaining.
  3. Add sirloin and brown over medium heat. Remove meat to a dish with mushrooms and onions.
  4. Add remaining ingredients to broth in the pan, making a paste with cornstarch first to avoid lumps in the gravy. Stir constantly until mixture thickens.
  5. Add back the beef, mushrooms, and onions, and mix together with the gravy.
  6. Pour this mixture into a large casserole dish.
  7. At this point, the dish can be refrigerated for cooking the next day.
  8. Bake, covered, in a 325°F oven for 1 1/2 hours.
  9. Serve with rice and green beans. Ideal for preparing in advance for a Sunday lunch.

Tips & Substitutions

For a richer flavor, consider using a combination of beef broth and red wine instead of water and vinegar. If you prefer a thicker gravy, increase the cornstarch slightly. Fresh garlic can be substituted with garlic powder if necessary. For a healthier option, you can replace margarine with olive oil. This dish can also be made with chicken or pork for a variation on classic beef recipes.

Serving Suggestions

Serve the beef tips with rice and steamed green beans for a complete meal. The rich gravy complements the rice perfectly, soaking in the flavors. For a heartier option, pair with mashed potatoes or a side salad. This dish also pairs beautifully with Family Salisbury Steaks if you want to explore more hearty meal options for your Sunday lunch.

Storage & Reheating

Leftovers can be stored in an airtight container in the refrigerator for up to three days. To reheat, place the dish in a covered oven at 350°F for about 30 minutes or until heated through. Alternatively, you can microwave individual portions, stirring occasionally, until warm. This allows the flavors to meld beautifully.

Frequently Asked Questions

Can I use frozen beef for this recipe?

Yes, you can use frozen beef, but it's best to thaw it completely in the refrigerator before cooking. This ensures even cooking and better flavor absorption. If you're in a hurry, you can also use the defrost setting on your microwave, but be careful not to start cooking the meat during the process.

What can I substitute for mushrooms?

If you're not a fan of mushrooms, you can substitute them with bell peppers or zucchini for added flavor and texture. You can also omit them entirely and add more onions or even carrots for a different taste profile while still maintaining the dish's integrity.

Is this dish suitable for meal prepping?

Absolutely! This dish is perfect for meal prepping. You can prepare it a day in advance, store it in the refrigerator, and then bake it when ready to serve. Just allow extra time for reheating. It’s ideal for busy weeknights or when you want to have a delicious homemade meal ready to go.
