Instructions

  1. In a large saucepan, heat oil.
  2. Brown the short ribs or soup meat on all sides.
  3. Add chopped onion and sliced carrots, and sauté for 5 minutes.
  4. Stir in water, crushed tomatoes, marjoram leaves, and pepper.
  5. Bring to a boil.
  6. Reduce heat and simmer, covered, for 1 hour.
  7. Skim off any fat from the surface.
  8. Add sliced mushrooms and uncooked rice, then simmer for an additional 30 minutes.
  9. Remove the meat from the bones and cut into bite-sized pieces.
  10. Return the meat to the soup.
  11. Add chopped fresh parsley.
  12. Heat until hot and serve.
