Ingredients

  • 1 16 oz. can french style green beans
  • 1 16 oz. can white whole kernel corn
  • 1 16 oz. can small green peas
  • 1 cup chopped celery
  • 1 medium chopped onion
  • 1 small red bell pepper, chopped
  • 1 cup sugar
  • 1/2 cup vinegar
  • 1/4 cup olive oil
  • salt and pepper to taste

Instructions

  1. Bring sugar and vinegar to a boil in a saucepan.
  2. Let the mixture cool to room temperature.
  3. Add olive oil to the cooled vinegar and sugar mixture and stir well.
  4. In a large bowl, combine green beans, corn, peas, chopped celery, chopped onion, and chopped red bell pepper.
  5. Pour the dressing over the vegetable mixture and toss to combine.
  6. Season with salt and pepper to taste.
  7. Chill before serving for best flavor.
