Ingredients

  • 2 lb. lean beef (boneless chuck)
  • 1/4 c. salad oil
  • 1 large clove garlic
  • 5 Tbsp. flour
  • 2 Tbsp. chopped parsley
  • 6 medium onions
  • 1 bay leaf
  • 1/4 tsp. thyme
  • 1 tsp. pepper
  • 12 oz. beer

Instructions

  1. Combine the flour, salt, and pepper.
  2. Dredge the beef in the seasoned flour.
  3. Heat the salad oil in a skillet; add sliced onions and chopped garlic until tender but not brown.
  4. Remove the onion and garlic from the skillet and set aside.
  5. Put the beef in the skillet and brown on all sides, adding a little more oil if necessary.
  6. Transfer the browned beef, onions, beer, bay leaf, and thyme to a casserole.
  7. Cover and bake in a preheated 325°F oven for three hours or more until the meat is tender.
  8. Remove the casserole from the oven; discard the bay leaf.
  9. Sprinkle with chopped parsley and serve with hot boiled potatoes.
