Ingredients

  • 1 Tbsp. butter
  • 1 green pepper, chopped
  • 1 onion, minced
  • 1 can chicken with rice soup
  • 1 can tomato soup
  • 1 c. water
  • 1 egg
  • 1 lb. ground lean beef
  • 2 slices soft bread
  • 1/4 c. evaporated milk
  • 1 tsp. salt

Instructions

  1. Melt butter in a skillet over medium heat.
  2. Add chopped green pepper and minced onion; cook until tender.
  3. Stir in chicken with rice soup, tomato soup, and water; bring to a boil.
  4. Reduce heat and simmer the sauce, stirring occasionally.
  5. While the sauce simmers, prepare the meatballs.
  6. Beat the egg slightly in a large bowl.
  7. Add ground beef, torn bread pieces, evaporated milk, and salt to the bowl.
  8. Mix well until ingredients are combined.
  9. Shape the mixture into balls about the size of ping pong balls.
  10. Drop the meatballs into the simmering sauce.
  11. Cook slowly for about 1 hour or until the sauce has thickened and meatballs are cooked through.
