  • 3 chopped carrots
  • 4 large potatoes, diced

Instructions

  1. Put the whole chicken in 3 1/2 quarts of water in a large Dutch oven. Add the bay leaf, ham hock bone, chopped onions, and parsley.
  2. Cook for about 45 minutes.
  3. Remove the whole chicken from the water and discard the bones.
  4. Return the chicken to the pot.
  5. Add the chopped celery, canned tomatoes, frozen lima beans, canned sweet corn, chopped carrots, and diced potatoes.
  6. Cook on low for 1 1/2 hours.
  7. Serve the stew with cornbread.
