Ingredients

  • 2 eggs
  • 2 tsp peanut oil
  • 2 cups cooked rice
  • 1/3 cup chopped scallions
  • 1/3 cup chopped carrots
  • 1 to 2 Tbsp soy sauce
  • 1/3 cup cooked ham (optional)
  • 1/3 cup frozen peas (optional)

Instructions

  1. Arrange all ingredients for easy access.
  2. Whisk eggs together in a small bowl.
  3. Preheat wok or skillet on medium to medium-high heat.
  4. Add peanut oil and heat for 1 minute.
  5. Add eggs and cook for 1 minute without stirring, until the top is moist and the bottom is cooked.
  6. Add cooked rice and toss with eggs, coating the rice with the moist egg while chopping in the cooked egg.
  7. Stir-fry for 2 minutes, then add scallions, carrots, and ham.
  8. Stir-fry for an additional 2 to 3 minutes.
  9. Add peas and soy sauce; toss until heated through.
