Ingredients

  • 3 cups sugar
  • 1 cup oil
  • 4 eggs
  • 2 cups mashed pumpkin
  • 1 cup chopped pecans
  • 2/3 cup water
  • 3 1/2 cups flour
  • 2 teaspoons baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon ginger

Instructions

  1. Beat sugar and oil together, then add eggs and mix well.
  2. Add water and mashed pumpkin to the mixture and blend thoroughly.
  3. In a separate bowl, combine flour, baking soda, cinnamon, and ginger.
  4. Gradually add dry ingredients to the wet mixture, mixing until just combined.
  5. Stir in chopped pecans.
  6. Pour batter into well-greased loaf pans (makes 2 loaves).
  7. Bake at 350°F (180°C) for 1 hour or until a toothpick inserted into the center comes out clean.
  8. Allow to cool before removing from pans and slicing.
