Ingredients

  • 1 1/2 cups sifted flour
  • 1 teaspoon baking powder
  • 1 1/2 cups sugar
  • 1 teaspoon salt
  • 2 pounds pitted dates
  • 2 pounds shelled walnuts
  • 1 pound Brazil nuts
  • 8 ounces maraschino cherries
  • 5 large eggs
  • 1 teaspoon vanilla

Instructions

  1. Leave nuts and dates whole; do not chop.
  2. Drain maraschino cherries; add dates, cherries, and nuts to the mixture.
  3. Cook fruit and nut mixture with sifted flour.
  4. Beat eggs and add vanilla.
  5. Mix egg mixture with flour mixture, preferably using your hands.
  6. Spoon the mixture into three greased pans measuring 8 1/2 x 4 1/2 x 2 1/2 inches.
  7. Bake at 325°F (160°C) for 1 hour.
  8. Allow to cool and store for a while before slicing for better results.
