Ingredients

  • 6 lb. dry white beans
  • 7 gal. ham or chicken stock
  • 8 ham bones
  • 2 3/4 cup shredded carrots
  • 4 1/2 cup finely chopped onion
  • 2 teaspoon pepper
  • 2 cup all-purpose flour

Instructions

  1. Rinse the dry white beans thoroughly.
  2. Place the beans in a large kettle with the ham or chicken stock and ham bones.
  3. Bring the mixture to a boil over high heat.
  4. Reduce heat, cover, and simmer for 2 to 3 hours or until beans are tender.
  5. Stir in shredded carrots, finely chopped onion, and pepper.
  6. Cover and simmer for an additional 30 minutes.
  7. In a small bowl, combine flour with cold water until smooth.
  8. Gradually stir the flour mixture into the soup.
  9. Cook the soup for another 10 minutes, stirring occasionally.
  10. If the soup is too thick, add more water to desired consistency.
