  • salt and pepper to taste
  • 1 tsp. red pepper
  • 1 tsp. ground cumin
  • 1 Tbsp. oregano
  • 1 Tbsp. Tabasco
  • 1 can Ro-Tel
  • 1 qt. tomatoes
  • 2 cans Bush chili beans
  • 3 cans pinto beans
  • 1 can beer

Instructions

  1. Brown the ground beef, onions, garlic, jalapeno peppers, bell pepper, green chilies, and add Tabasco sauce and spices.
  2. Cook the mixture for 1 hour, then add tomatoes and Ro-Tel tomatoes.
  3. Simmer the chili for another hour, stirring often.
  4. Set the chili out in a snow bank overnight.
  5. Start again the next day on low simmer.

Tips & Substitutions

For a milder chili, you can reduce the number of jalapenos or remove the seeds. If you want to add depth, consider including a tablespoon of cocoa powder or a dash of cinnamon. Substituting ground turkey for beef can lighten the dish. Additionally, using fresh tomatoes instead of canned can enhance freshness, especially in summer.

Serving Suggestions

Serve Big Doug's 6 Alarm Chili with a dollop of sour cream and shredded cheese on top. It pairs wonderfully with cornbread or tortilla chips for dipping. For a heartier meal, consider serving it alongside Beef And Gravy Noodles. Garnish with fresh cilantro or green onions for added flavor.

Storage & Reheating

Store leftover chili in an airtight container in the refrigerator for up to 4 days. For longer storage, freeze it in portions, which can last up to 3 months. When reheating, use a stovetop or microwave, adding a splash of water or broth if it thickens too much.

Frequently Asked Questions

Can I make this chili in advance?

Yes, making this chili a day ahead enhances the flavors. After cooking, let it cool and refrigerate. Reheat before serving, and consider adding a bit of water to adjust the consistency.

Is it possible to make this chili vegetarian?

Absolutely! Replace the ground beef with a mix of beans and lentils, and use vegetable broth instead of beer. This will still give you a hearty and flavorful chili without the meat.

What type of beer is best for this recipe?

A darker beer, such as a stout or porter, can add richness to the chili. However, a light lager can also work if you prefer a milder flavor. Avoid overly hoppy beers as they can overpower the dish.
