Ingredients

  • 15 ripe peaches
  • 1 lemon
  • 1 1/4 tsp cinnamon
  • 1 1/2 cups brown sugar
  • 2/3 cup flour
  • 1/2 cup cornmeal
  • 1 1/2 tsp salt
  • 1 1/2 cups butter flavored shortening
  • 1 tablespoon milk

Instructions

  1. Peel and slice peaches; grate 2 teaspoons lemon peel and squeeze 2 tablespoons lemon juice.
  2. Toss peaches with sugar, lemon peel, lemon juice, and 2 tablespoons flour.
  3. In another bowl, mix flour, cornmeal, salt, and shortening; work to the consistency of coarse crumbs.
  4. Add 8 to 9 tablespoons cold water and mix until dough comes together.
  5. Divide the dough into two balls, one larger for the bottom crust.
  6. Roll the larger ball out to fit a 13 x 9-inch baking dish.
  7. Place the rolled crust in the baking dish and spoon the peach mixture over it.
  8. Roll out the second dough ball and place it over the peaches to form the top crust.
  9. Make slits in the top crust to allow steam to escape.
  10. Brush the top crust with milk and sprinkle with sugar.
  11. Bake for 45 minutes at 350°F (175°C) until golden brown.
