- Saute chopped onion and sliced green pepper until tender in chicken broth.
- Wash and drain both cans of black beans. Mash one can of black beans.
- Add the mashed beans, remaining black beans, and salsa to the sautéed vegetables. Cook until the mixture thickens.
- Place about 3 to 4 tablespoons of the bean mixture onto each flour tortilla, roll up, and fold in the ends.
- Place the filled tortillas in a pan and bake at 350°F (175°C) for 15 minutes.
- Sprinkle cheddar cheese on top of the tortillas and bake for an additional 5 minutes until cheese melts.
- Serve the tortillas on chopped lettuce and tomatoes, topped with sour cream.
