Ingredients

  • 1 to 1 1/2 lb lean ground beef
  • 2 cans black-eyed peas
  • 1 large can tomatoes
  • 1 cup chopped bell peppers
  • 1 to 1 1/2 cups chopped onion

Instructions

  1. Crumble and cook the ground beef in a large skillet.
  2. Remove the cooked meat from the pan and set aside.
  3. Saute chopped onion and bell peppers until the onion begins to get clear.
  4. Add the cooked meat back into the skillet along with the black-eyed peas and tomatoes.
  5. Simmer the mixture together for 5 to 10 minutes.
  6. Season with salt and pepper to taste.
  7. Serve with tossed salad and garlic bread for a complete meal.
