Ingredients

  • beef stew meat
  • potatoes, diced
  • carrots, chopped
  • celery, chopped
  • onions, diced
  • corn, canned or frozen
  • 1 can creamed corn
  • 1 can kidney or pinto beans
  • green beans, cut
  • canned tomatoes, diced
  • 1 Tbsp dried parsley
  • 2 bay leaves
  • salt

Instructions

  1. Generously cover stew meat with water and boil for 15 minutes or until the meat is tender.
  2. Strain the liquid and chop the meat into spoon-sized pieces.
  3. In a large stockpot, combine the meat, its liquid, fresh vegetables, parsley, bay leaves, and enough water to cover.
  4. Add a few teaspoons of bouillon and simmer until the vegetables are tender.
  5. Add all canned vegetables along with their liquid.
  6. Season with salt, pepper, and additional bouillon to taste.
  7. Heat to a simmer and serve.
