Ingredients

  • 1/2 cup butter or margarine
  • 1 cup sugar
  • 2 eggs
  • 1 cup mashed ripe bananas
  • 1 cup crushed pineapple
  • 1 cup shredded coconut
  • 1/3 cup poppy seed
  • 1/2 cup chopped walnuts
  • 1/2 cup chocolate chips
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup whole wheat flour
  • 1 cup all-purpose flour

Instructions

  1. Combine melted butter or margarine, sugar, eggs, mashed bananas, and crushed pineapple, blending until smooth.
  2. In a separate bowl, mix together the dry ingredients: shredded coconut, poppy seed, chopped walnuts, chocolate chips, salt, baking soda, whole wheat flour, and all-purpose flour.
  3. Add the dry mixture to the wet mixture and stir until just combined.
  4. Pour the batter into muffin tins lined with paper liners or greased.
  5. Bake at 350°F (175°C) for approximately 20-25 minutes, or until a wooden pick inserted in the center comes out clean.
  6. Remove from oven and let cool slightly before serving.
