Ingredients

  • 1/4 cup sliced onion
  • 2 tablespoons shortening
  • 2 tablespoons flour
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 (16 oz) can tomatoes
  • 1/2 pound bologna, cut into cubes
  • 3/4 cup cooked diced carrots
  • 3/4 cup cooked green beans

Instructions

  1. Preheat oven to 425°F.
  2. In a large skillet, cook sliced onion in shortening until tender.
  3. Remove from heat.
  4. Stir in flour, salt, and pepper. Cook over low heat, stirring until the mixture is bubbly.
  5. Remove from heat.
  6. Stir in canned tomatoes.
  7. Heat to boiling, stirring constantly, and boil for 1 minute.
  8. Stir in cubed bologna, diced carrots, and green beans.
  9. Heat to boiling again.
  10. Pour the mixture into an ungreased 8x8x2-inch baking pan.
  11. Drop 8 or 9 tablespoons of biscuit dough onto the hot vegetables.
  12. Bake uncovered for 25 to 30 minutes or until biscuits are golden brown.
