Ingredients

  • 4 lb. beef short ribs
  • salt
  • pepper
  • 1/2 onion, finely chopped
  • 1 Tbsp. vegetable oil
  • 1 garlic clove, minced
  • 1 c. ketchup
  • 2 Tbsp. molasses
  • 1 c. water
  • 1 Tbsp. brown mustard
  • 1 Tbsp. Worcestershire sauce
  • 1 Tbsp. hot sauce

Instructions

  1. Season short ribs with salt and pepper.
  2. Brown the short ribs under a broiler or on a hot grill.
  3. In a pressure cooker, cook the chopped onion until tender over moderate heat.
  4. Add minced garlic and stir to combine.
  5. Add ketchup, molasses, water, brown mustard, Worcestershire sauce, hot sauce, and cider vinegar; bring to a boil.
  6. Add the browned ribs to the pressure cooker and seal.
  7. Cook over high heat until steam flows steadily.
  8. Reduce heat to maintain constant steam and cook for 15 minutes.
  9. Turn off heat and let the pressure cooker cool naturally for 10 minutes.
  10. Release pressure carefully and open the cooker.
  11. Transfer the meat to a platter.
  12. If sauce is too thin, boil for a minute until thickened.
