Ingredients

  • 1/2 cup water
  • 1 1/2 cups all-bran cereal
  • 1/4 cup butter or margarine
  • 3/4 cup sugar
  • 1 cup buttermilk or sour milk
  • 1 egg
  • 1 1/4 cups all-purpose flour
  • 1 teaspoon soda
  • 1/2 cup raisins

Instructions

  1. In a 1-cup measure, heat water to boiling (about 1 minute).
  2. Place all-bran cereal in a bowl.
  3. Stir in the hot water until the cereal is moistened.
  4. Add butter or margarine and let it set until softened.
  5. Cover the bowl.
  6. Stir in sugar and egg; beat well.
  7. Blend in buttermilk or sour milk, flour, and baking soda.
  8. Mix well until combined.
  9. Spoon the batter into paper-lined custard cups, filling them halfway.
  10. Cook the muffins uncovered in the microwave until no doughy spots remain, about 2 minutes.
  11. Store any remaining batter in the refrigerator for up to 6 weeks, using as needed.
