Ingredients

  • 1 envelope gelatin
  • 1/2 cup cold water
  • 2/3 cup sugar
  • 1/8 teaspoon salt
  • 3 eggs, separated
  • 1/4 cup cognac
  • 1/4 cup creme de cacao (white)
  • 2 cups whipped cream
  • 1 (9-inch) chocolate cookie pie crust

Instructions

  1. Put water in a medium saucepan.
  2. Stir in gelatin until softened.
  3. Add 1/3 cup sugar, salt, and egg yolks; blend.
  4. Heat slowly until gelatin is dissolved and mixture thickens, do not boil.
  5. Remove from heat and stir in cognac and creme de cacao.
  6. Chill until mixture mounds.
  7. Fold whipped cream into the chilled mixture.
  8. Pour into the chocolate cookie pie crust and refrigerate until set.
