Crunchy, cheesy breakfast cookies packed with oats, nuts, and bacon or raisins, perfect for a satisfying start to the day or a tasty snack.

Ingredients

  • 2/3 c. margarine
  • 1 egg
  • 3/4 c. all-purpose flour
  • 1 c. shredded Cheddar cheese
  • 2/3 c. sugar
  • 1/2 tsp. baking soda
  • 1 1/2 c. rolled oats
  • 2/3 c. peanuts
  • 10 strips bacon or 1 c. raisins

Instructions

  1. Beat margarine, sugar, and egg in a large mixing bowl.
  2. Add flour and baking soda, then mix well.
  3. Stir in rolled oats, shredded Cheddar cheese, peanuts, and crumbled bacon or raisins.
  4. Drop by teaspoonfuls onto baking sheets, leaving space between each.
  5. Bake at 350°F for 15 minutes.
  6. Cool on wire racks.
  7. Store in refrigerator.
