Ingredients

  • 6 oz. hash brown potato mix with onions
  • 1 qt. hot water
  • 5 eggs
  • 1/2 cup cottage cheese
  • 1 cup shredded Swiss cheese
  • 1 green onion
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 4 drops hot sauce
  • 6 slices bacon
  • paprika

Instructions

  1. Cover hash browns with hot water; let stand for 10 minutes.
  2. Drain well and set aside.
  3. Preheat oven to 375°F (190°C).
  4. In a mixing bowl, beat eggs and stir in cottage cheese, shredded Swiss cheese, chopped green onion, salt, pepper, and hot sauce.
  5. Spread the drained hash browns evenly in a greased pie dish or baking dish.
  6. Pour the egg mixture over the hash browns.
  7. Bake in the preheated oven for 25-30 minutes until the eggs are set and the top is golden.
  8. Sprinkle crumbled bacon on top before serving and garnish with paprika if desired.
