Bridal Soup is a hearty, flavorful dish featuring tender meatballs, spinach, and rich chicken broth, perfect for comforting family dinners or special gatherings.

Ingredients

  • 1/2 lb. ground chuck
  • 3/4 tsp. salt
  • 1/8 tsp. pepper
  • 1 Tbsp. snipped parsley
  • 2 Tbsp. grated Parmesan Cheese
  • 1 Tbsp. packaged bread crumbs
  • 7-8 cups chicken broth
  • 1 10 oz. pkg. frozen chopped spinach
  • 3 eggs

Instructions

  1. Combine ground chuck, salt, pepper, parsley, 2 Tbsp. Parmesan cheese, and bread crumbs in a bowl.
  2. Form the mixture into small balls about the size of a grape and set aside.
  3. Bring 7-8 cups of chicken broth to a boil in a large pot.
  4. Add the frozen chopped spinach to the boiling broth and cook until heated through.
  5. Gently drop the meatballs into the boiling broth and spinach.
  6. Cook the soup until the meatballs are cooked through, approximately 20-30 minutes.
  7. In a separate bowl, beat the eggs.
  8. Gradually add the beaten eggs into the simmering soup, stirring gently to create egg ribbons.
