Ingredients

  • 2 cups diced fully cooked ham
  • 1 medium onion, chopped
  • 1 clove garlic, minced
  • 2 tablespoons butter or margarine
  • 2 (10 3/4 oz.) cans condensed chicken broth
  • 2 cups chopped fresh broccoli or 1 (10 oz.) package frozen chopped broccoli
  • 1 1/2 cups water
  • 1 (8 oz.) can tomatoes, cut up
  • 1/2 cup elbow macaroni
  • 1/4 teaspoon ground nutmeg
  • Grated Parmesan cheese

Instructions

  1. In a 3-quart saucepan, cook ham, onion, and garlic in butter until the onion is tender.
  2. Stir in condensed chicken broth, chopped broccoli, water, undrained tomatoes, uncooked macaroni, and nutmeg.
  3. Bring to a boil.
  4. Reduce heat, cover, and simmer for 8 to 10 minutes or until broccoli and macaroni are tender.
  5. Season to taste with salt and pepper.
  6. Serve individual portions sprinkled with grated Parmesan cheese.
