Polynesian Turkey Bake

Ingredients
- 6 oz fried rice mix ⓘ
- 1 lb ground raw turkey ⓘ
- 1 cup soft bread crumbs ⓘ
- 1 egg ⓘ
- 3/4 teaspoon salt
- 1/2 teaspoon ground ginger ⓘ
- 1/8 teaspoon pepper ⓘ
- 1 tablespoon vegetable oil ⓘ
- 1 cup sugar ⓘ
- 3 tablespoons cornstarch ⓘ
- 8 oz sliced pineapple, drained
- reserved pineapple juice ⓘ
- 2/3 cup cider vinegar ⓘ
- 1 tablespoon soy sauce ⓘ
- 2 teaspoons chicken bouillon granules ⓘ
- 1 green pepper, cut in strips ⓘ
Instructions
- Preheat oven to 375°F.
- Prepare rice mix according to package directions.
- Transfer cooked rice to a 3-quart oblong baking dish; set aside.
- In a large skillet, heat vegetable oil over medium heat.
- Add ground turkey, salt, ground ginger, and pepper; cook until turkey is browned and cooked through.
- Stir in bread crumbs and lightly beaten egg; mix well.
- Shape the turkey mixture into a loaf or mound on top of the rice in the baking dish.
- In a saucepan, combine sugar, cornstarch, pineapple juice, cider vinegar, soy sauce, and chicken bouillon granules.
- Cook over medium heat, stirring constantly until thickened and bubbly.
- Add drained pineapple slices, green pepper strips, and sliced pimentos to the sauce; cook for 2-3 minutes.
- Pour pineapple sauce and vegetables over the turkey and rice in the baking dish.
- Bake in the preheated oven for 30 minutes, until heated through and bubbly.
- Serve hot, garnished with additional pineapple or vegetables if desired.
