Ingredients

  • 6 oz fried rice mix
  • 1 lb ground raw turkey
  • 1 cup soft bread crumbs
  • 1 egg
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground ginger
  • 1/8 teaspoon pepper
  • 1 tablespoon vegetable oil
  • 1 cup sugar
  • 3 tablespoons cornstarch
  • 8 oz sliced pineapple, drained
  • reserved pineapple juice
  • 2/3 cup cider vinegar
  • 1 tablespoon soy sauce
  • 2 teaspoons chicken bouillon granules
  • 1 green pepper, cut in strips

Instructions

  1. Preheat oven to 375°F.
  2. Prepare rice mix according to package directions.
  3. Transfer cooked rice to a 3-quart oblong baking dish; set aside.
  4. In a large skillet, heat vegetable oil over medium heat.
  5. Add ground turkey, salt, ground ginger, and pepper; cook until turkey is browned and cooked through.
  6. Stir in bread crumbs and lightly beaten egg; mix well.
  7. Shape the turkey mixture into a loaf or mound on top of the rice in the baking dish.
  8. In a saucepan, combine sugar, cornstarch, pineapple juice, cider vinegar, soy sauce, and chicken bouillon granules.
  9. Cook over medium heat, stirring constantly until thickened and bubbly.
  10. Add drained pineapple slices, green pepper strips, and sliced pimentos to the sauce; cook for 2-3 minutes.
  11. Pour pineapple sauce and vegetables over the turkey and rice in the baking dish.
  12. Bake in the preheated oven for 30 minutes, until heated through and bubbly.
  13. Serve hot, garnished with additional pineapple or vegetables if desired.
