Ingredients

  • 2 lb. fresh broccoli
  • 8 oz. fresh mushrooms
  • 1 c. butter
  • 1 c. flour
  • 4 c. chicken broth
  • 4 c. half and half
  • 1 tsp. salt
  • 1/4 tsp. white pepper

Instructions

  1. Cut broccoli into 1/2-inch pieces.
  2. Steam the broccoli in 1/2 cup water until tender, do not drain.
  3. In a large pan over medium heat, melt the butter.
  4. Add flour and cook, stirring constantly, for 2 to 4 minutes without letting it brown.
  5. Stir in chicken broth and bring to a boil.
  6. Reduce heat to low.
  7. Add the steamed broccoli, sliced mushrooms, half and half, salt, and white pepper.
  8. Heat through but do not boil.
