Ingredients

  • 1 lb. boneless chicken
  • 3 Tbsp. butter
  • 1/4 cup chopped onion
  • 1/4 cup flour
  • 1 tsp. dry mustard
  • 1/4 tsp. salt
  • 1/4 tsp. dried thyme, crushed
  • 1/8 tsp. pepper
  • 1 3/4 cups milk
  • 1 (14 1/2 oz.) can chicken broth
  • 1/2 package or 2 cups frozen mixed broccoli, cauliflower, and carrots

Instructions

  1. Cook the chicken, then cube it and reserve the liquid.
  2. Set the cooked chicken aside.
  3. In a 3-quart saucepan, melt the butter over medium heat.
  4. Add chopped onion and cook until tender but not browned.
  5. Stir in flour, dry mustard, salt, thyme, and pepper.
  6. Add milk and chicken broth all at once, then cook and stir until slightly thickened and bubbly.
  7. Stir in the frozen mixed vegetables, cooked chicken, and reserved chicken liquid.
  8. Cook and stir for 4 to 6 minutes longer, or until the vegetables are tender and the soup is heated through.
