Ingredients

  • 3/4 cup skim milk
  • 1/2 cup shredded Cheddar cheese (low-fat)
  • 1 egg
  • 10 oz broccoli spears, thawed and chopped
  • 1/8 teaspoon salt
  • 1 clove garlic
  • 2 tablespoons margarine
  • 2 slices dry whole wheat toast
  • 1 tablespoon Parmesan cheese

Instructions

  1. Combine the skim milk, margarine, and shredded Cheddar cheese in a saucepan over low heat until the cheese melts.
  2. Remove from heat and stir in the egg.
  3. Place the chopped broccoli in a greased 1-quart baking dish and sprinkle with salt.
  4. Pour the cheese mixture over the broccoli.
  5. In a small skillet, cook and stir the minced garlic in margarine for 2 minutes.
  6. Add the toast cubes to the skillet and stir until the butter is absorbed.
  7. Sprinkle the toasted bread over the broccoli and cheese mixture, then top with Parmesan cheese.
  8. Bake at 350°F (175°C) for 30 minutes until bubbly and golden.
