Broccoli Roll-Ups

Ingredients

  • 1/4 cup water or chicken broth
  • 1/4 cup chopped green bell pepper
  • 1/4 cup chopped onion
  • 1/2 cup chopped mushrooms
  • 1 teaspoon chopped fresh parsley
  • 1/2 teaspoon dried basil leaves
  • 1/2 teaspoon dried oregano leaves
  • 1/2 teaspoon dried thyme leaves
  • 2 cups low-sodium tomato sauce
  • 3 cups chopped broccoli, steamed
  • 1/4 cup nonfat Parmesan cheese
  • 1 cup nonfat skim Ricotta or cottage cheese
  • 1/2 teaspoon black pepper
  • 6 lasagne noodles, cooked and well drained

Instructions

  1. Heat water or chicken broth in a saucepan over medium heat.
  2. Add chopped green bell pepper, onion, and mushrooms.
  3. Cook and stir over medium heat for 5 minutes or until vegetables are lightly browned.
  4. Add more liquid if needed.
  5. Add chopped parsley, dried oregano, dried thyme, and low-sodium tomato sauce.
  6. Simmer over very low heat for 10 minutes.
  7. Spread the cooked vegetable mixture over cooked lasagne noodles.
  8. Add steamed chopped broccoli and nonfat ricotta or cottage cheese.
  9. Sprinkle with nonfat Parmesan cheese and black pepper.
  10. Roll up the noodles to form roll-ups.
  11. Serve warm with extra sauce if desired.
