Broccoli Spoon Bread Casserole

Ingredients

  • 1 bunch broccoli
  • 2 Tbsp. flour
  • 2 c. water
  • 1 c. sliced celery
  • 1/2 c. chopped onion
  • 1 c. milk
  • 1/4 tsp. hot pepper sauce
  • 3/4 c. corn meal
  • 1 tsp. salt
  • 4 Tbsp. butter
  • 1/2 c. chopped green pepper
  • 4 eggs, separated
  • 1 c. shredded Cheddar cheese
  • 2 c. ham, chopped

Instructions

  1. Remove stems and leaves from broccoli.
  2. Reserve stems for florets later use. Place broccoli florets in a saucepan with 1-inch boiling salted water.
  3. Cover and cook 10 to 12 minutes, until just tender.
  4. Drain and set aside.
