Ingredients

  • 10 oz. frozen chopped broccoli, thawed and squeezed dry
  • 3 Tbsp. margarine
  • 1 small onion, minced
  • 2 Tbsp. flour
  • 2 cups half and half
  • 4 eggs
  • 1 Tbsp. chicken bouillon or 1 envelope
  • 1 tsp. salt
  • 1/8 tsp. pepper

Instructions

  1. Finely chop the broccoli and set aside.
  2. Preheat oven to 350°F (175°C).
  3. In a one-quart saucepan, over medium heat, melt the margarine and cook the minced onion until tender, stirring occasionally.
  4. Stir in the flour until blended and cook for 1 minute, stirring frequently.
  5. Gradually stir in one cup of half and half, cook, stirring constantly, until slightly thickened. Remove from heat.
  6. Grease six 6-ounce custard cups or twelve muffin tins.
  7. In a medium bowl, whisk together eggs, chicken bouillon, salt, pepper, and the remaining half and half.
  8. Stir in the cooked onion mixture and chopped broccoli.
  9. Ladle the egg mixture into the prepared custard cups.
  10. Place the cups in a 13 x 9-inch baking pan and set on the oven rack.
  11. Pour boiling water into the pan to come halfway up the sides of the cups.
  12. Bake for 35 minutes if using custard cups or 20 minutes if using muffin tins, until a knife inserted in the center comes out clean.
  13. Invert the custard cups onto a platter to serve.
