Broccoli Walnut Ring *

A savory broccoli and walnut mold with a cheesy texture, seasoned with garlic and onion, perfect for a hearty appetizer or vegetable side dish.

Ingredients

  • 10 oz. frozen chopped broccoli
  • 1 clove garlic
  • 1 chopped onion
  • 1/2 cup margarine
  • 1 1/2 Tbsp. potato starch
  • 1 cup onion soup or bouillon
  • 3 eggs
  • 1/2 cup chopped walnuts

Instructions

  1. Grease a 1 1/2-quart mold with margarine.
  2. Sauté onion and garlic in margarine until golden.
  3. Dissolve potato starch in onion soup or bouillon and add to sautéed mixture.
  4. Cook until thick and smooth.
  5. Cool slightly.
  6. Beat egg yolks until light.
  7. Stir yolks, thawed broccoli, and chopped walnuts into the sauté mixture.
  8. Beat egg whites until stiff in a separate bowl.
  9. Fold egg whites into the broccoli mixture.
  10. Spoon into the prepared mold.
  11. Bake at 350°F (175°C) for 30 to 35 minutes or until firm.
  12. Wait 5 minutes after removing from oven before unmolding.
  13. Serve.
