Broiled fish with a tangy lemon butter sauce, complemented by sweet baby carrots and asparagus, perfect for a quick, flavorful, and healthy seafood dinner.

Ingredients

  • 2 lb. fish fillets or steaks, fresh or frozen (haddock, cod, cod steaks)
  • 1/2 c. lemon juice
  • 3 Tbsp. butter
  • 2 Tbsp. grated onion
  • 2 Tbsp. brown sugar
  • 1 tsp. dry mustard
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • paprika
  • baby carrots

Instructions

  1. Arrange the fish in a single layer in a heatproof platter or shallow baking pan.
  2. In a small saucepan, combine lemon juice, butter, grated onion, brown sugar, dry mustard, salt, and pepper.
  3. Heat the mixture, stirring, until blended and heated through.
  4. Pour the sauce over the fish.
  5. Preheat the broiler.
  6. Broil the fish slowly about 4 inches from the flame, basting 2 or 3 times with the sauce, until the fish is browned and flakes when tested with a fork.
  7. Sprinkle with paprika after the final basting.
  8. Arrange cooked baby carrots and asparagus spears around the edge of the platter and serve.
