Ingredients

  • vegetable cooking spray
  • 2 carrots, chopped
  • 1/2 cup onions, chopped
  • 1 cup brown rice, uncooked
  • 1 teaspoon beef bouillon
  • 1 cup sliced fresh mushrooms
  • 2 tablespoons grated Parmesan cheese
  • 1/4 teaspoon pepper
  • 1 teaspoon margarine
  • 2 cups water
  • 1/4 cup sherry

Instructions

  1. Heat margarine in a large skillet. When melted, add carrots and onions. Saute until tender.
  2. Add rice and cook over low heat for 1 minute, stirring constantly.
  3. Add water, sherry, bouillon, and pepper. Cover and simmer for 45 minutes until liquid is absorbed.
  4. Transfer to a bowl, set aside, and keep warm.
