Ingredients

  • 5 lb beef shin
  • 3 qt cold water
  • 8 peppercorns
  • 5 cloves
  • 1 bay leaf
  • 2 sprigs parsley
  • 3 sprigs thyme
  • 1 stalk celery
  • 1/2 cup carrots, diced
  • 1/2 cup turnips, diced
  • 2 large onions, sliced

Instructions

  1. Cut the lean meat from the bones and brown one-third of it in the marrow taken from the bones.
  2. Put the remaining meat and bones in a large kettle and cover with cold water.
  3. Let it stand for 1 hour.
  4. Add the browned meat and seasonings (peppercorns, cloves, bay leaf, parsley, thyme, celery) and bring to a boil.
  5. Reduce the heat and cook slowly for 5 hours, removing scum as it forms on top.
  6. Add the diced carrots, turnips, and sliced onions.
  7. Cook for an additional 1½ hours.
  8. Strain the stock through a cheesecloth and cool.
