Brown Soup Stock

- Cut the lean meat from the bones and brown one-third of it in the marrow taken from the bones.
- Put the remaining meat and bones in a large kettle and cover with cold water.
- Let it stand for 1 hour.
- Add the browned meat and seasonings (peppercorns, cloves, bay leaf, parsley, thyme, celery) and bring to a boil.
- Reduce the heat and cook slowly for 5 hours, removing scum as it forms on top.
- Add the diced carrots, turnips, and sliced onions.
- Cook for an additional 1½ hours.
- Strain the stock through a cheesecloth and cool.
