Ingredients

  • 1/2 lb ground beef
  • 1 onion, chopped
  • 1 tsp salt
  • 1 tsp pepper
  • 1 small can mushroom pieces and liquid
  • 1 (46 oz) can tomato juice
  • 4 potatoes, peeled and cubed
  • 2 large carrots, peeled and sliced thin
  • 1 can green beans and liquid
  • 1/2 tsp oregano
  • 1/4 tsp basil
  • 1/4 tsp thyme

Instructions

  1. Brown the ground beef and chopped onion in a Dutch oven.
  2. Drain off the grease.
  3. Add the mushroom pieces and liquid, tomato juice, peeled and cubed potatoes, sliced carrots, green beans and their liquid, salt, pepper, oregano, basil, and thyme.
  4. Stir well and bring to a boil.
  5. Add the uncooked elbow macaroni and stir again.
  6. Cover and reduce heat to medium.
  7. Cook until the vegetables are tender, about 45 minutes.
