Ingredients

  • 1 lb. ground beef
  • 15 oz. can tomato sauce
  • 1/4 cup minced onion
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 (10 oz.) packages frozen spinach, thawed
  • 1 (16 oz.) carton cottage cheese
  • 1 teaspoon parsley flakes
  • 1/2 teaspoon oregano
  • 1/4 teaspoon salt

Instructions

  1. Brown the ground beef in a skillet.
  2. Stir in tomato sauce, minced onion, salt, and pepper, then simmer for 10 minutes.
  3. Press the thawed spinach very dry and combine it with cottage cheese, parsley flakes, oregano, and salt.
  4. Spread the spinach mixture around the side of a casserole dish.
  5. Spoon the beef mixture into the center of the casserole dish.
  6. Top with shredded mozzarella cheese.
  7. Bake at 375°F for 20 to 25 minutes until cheese is melted and bubbly.
