Ingredients

  • 4 slices bacon
  • 1/4 cup oleo
  • 1/2 pound chopped beef or ham
  • 1 or 2 (4 oz.) cans sliced mushrooms
  • pepper to taste
  • 1/2 cup flour
  • 1 quart milk
  • 16 eggs

Instructions

  1. Mix together bacon, chopped beef or ham, sliced mushrooms, oleo, and pepper in a bowl.
  2. Crumble the cooked bacon and finely chop the beef or ham.
  3. Sprinkle the mixture with flour and then add milk, stirring well.
  4. Heat the mixture and stir until thickened.
  5. In a separate bowl, scramble the eggs into 1/2 cup oleo until well combined.
  6. Use a large deep dish casserole or pan, approximately 9 x 13 inches.
  7. Layer the sauce mixture and scrambled eggs in the casserole, ending with the sauce on top. Usually, make four layers.
  8. Cover the casserole tightly with a lid or aluminum foil.
  9. Bake at 275°F (135°C) for 1 hour.
  10. Can be prepared a day ahead, covered, and refrigerated before baking.
