Ingredients

  • 3 to 4 lb beef rump, chuck or shoulder
  • 2 tsp salt
  • 1/4 tsp pepper
  • 1 large onion, sliced
  • 1 tbsp parsley
  • 1 tbsp chives
  • 1/8 tsp thyme
  • 1 clove garlic, minced
  • 1 bay leaf
  • 1 stalk celery, chopped
  • 1 cup canned tomatoes
  • 1/4 cup dry white wine

Instructions

  1. Heat a frying pan.
  2. Add the beef and brown on all sides.
  3. Season with salt and pepper.
  4. Place sliced onion on top of the meat, then add wine and the rest of the ingredients.
  5. If desired, during the last hour of cooking, add peeled halved potatoes, small peeled whole onions, and carrots cut diagonally into 2-inch pieces.
  6. Make gravy by using 1/2 cup dry white wine to replace 1/2 cup of the cooking liquid.
