Ingredients

  • 8 slices firm white bread
  • 4 oz. shredded mozzarella cheese
  • 1 (10 oz.) package chopped spinach, thawed and squeezed dry
  • 1 tablespoon margarine or butter, softened
  • 2 cups milk
  • 6 large eggs
  • 1/2 cup loosely packed fresh basil leaves, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. Grease an 8 x 8 inch glass baking dish.
  2. Place 4 slices of bread in the dish.
  3. Top with 1/2 cup shredded mozzarella cheese, all chopped spinach, then remaining cheese.
  4. Spread margarine or butter on one side of the remaining bread slices.
  5. Place the buttered bread slices in the dish, buttered side up.
  6. In a medium bowl, beat eggs, milk, chopped basil, salt, and black pepper until blended.
  7. Slowly pour the egg mixture over the bread slices in the dish.
  8. Prick the bread with a fork and press slices down to absorb the egg mixture.
  9. Cover the dish with plastic wrap and refrigerate for at least 30 minutes or overnight.
  10. Preheat oven to 350°F (175°C).
  11. Uncover the baking dish and bake for 1 hour or until a knife inserted in the center comes out clean.
  12. Remove from oven and let stand for 5 minutes before serving.
