  • 2 Tbsp. red pepper
  • 1/2 c. salt
  • 4 large potatoes, chopped
  • 1/2 gal. chicken broth
  • 1 gal. beef broth
  • 4 (15 oz.) cans tomato sauce
  • 1/2 bottle Worcestershire
  • 2 (32 oz.) bottles catsup

Instructions

  1. Cook and grind all the meats (top sirloin, chicken, pork loin).
  2. Place the ground meats in a large container or washpot.
  3. Add all ingredients except Worcestershire and sugar to the container.
  4. Cook the mixture slowly, stirring often, for at least 2 hours.
  5. Add sugar and Worcestershire sauce during the last 30 minutes of cooking.
  6. When boiling the meats, save the broth for the stew.
  7. Can be adjusted for fewer servings.

Tips & Substitutions

For the best flavor, consider marinating the meats overnight in spices before grinding. If you're short on time, you can substitute cooked shredded rotisserie chicken for the whole chicken. To achieve a thicker consistency, add more chopped potatoes or use a potato masher to break them down further during cooking.

Serving Suggestions

Serve Brunswick stew hot, garnished with fresh parsley for a pop of color. It pairs wonderfully with cornbread or a side salad, like Thai Rice Salad With Peanut Dressing, to balance the hearty stew. For a complete meal, consider offering a selection of pickled vegetables or coleslaw on the side.

Storage & Reheating

Store any leftover Brunswick stew in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze in portions for up to 3 months. When reheating, do so gently on the stovetop or in the microwave, adding a bit of broth if it thickens too much.
