Ingredients

  • 1 pkg. flour tortillas
  • 1 lb. ground beef
  • 1 can Ro-Tel tomatoes
  • 1/2 lb. Velveeta cheese
  • 1 c. Cheddar cheese
  • 1 bell pepper
  • 1 small onion
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 Tbsp. oil

Instructions

  1. Brown ground beef in 1 tablespoon of oil.
  2. Add chopped bell pepper, chopped onion, salt, and pepper; cook until vegetables are tender.
  3. Stir in Ro-Tel tomatoes and Velveeta cheese; simmer on low heat for about 15 minutes.
