  • 1 small bay leaf
  • ham bone or shank
  • 1 1/2 tsp. sugar
  • 1 Tbsp. butter
  • parsley (optional)
  • 2 to 3 potatoes, chopped

Instructions

  1. Soak the split peas in water overnight.
  2. Cook the salt pork for 5 minutes to render some fat.
  3. Add chopped carrots and onions to the salt pork and cook about 10 minutes until soft.
  4. Add the soaked peas, seasonings, and ham bone or shank to the pot.
  5. Cover and bring the mixture slowly to a boil.
  6. Add the chopped potatoes.
  7. Reduce heat and simmer gently for about 2 hours until the peas are tender.
  8. Remove the ham bone or shank from the soup.
  9. Strain the soup to remove any solids if desired.
  10. Remove all meat from the ham bone, dice it, and add it back into the hot soup.
  11. Stir in sugar and butter.
  12. Optionally, add 1/2 cup of thin cream and garnish with parsley before serving.
