Ingredients

  • 2 c. boiling water
  • 1/2 lb. raisins
  • 2 tsp. soda
  • 2 Tbsp. butter
  • 2 c. sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 4 c. sifted flour
  • 1 tsp. salt
  • 2 tsp. vanilla

Instructions

  1. Boil 2 cups of water and pour over raisins to soak.
  2. In a large mixing bowl, combine sifted flour, salt, and baking soda.
  3. Add butter, sugar, eggs (with vanilla mixed in), and vanilla extract to the soaked raisins.
  4. Mix the wet ingredients into the dry ingredients until well combined.
  5. Fold in chopped walnuts.
  6. Grease six gold-lined No. 3 tin cans and evenly distribute the batter among them.
  7. Bake in a preheated oven at 350°F (175°C) for approximately 60 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow to cool before removing from the tins and serving.
