Hearty and robust chili featuring tender ground beef, aromatic spices, and rendered suet, perfect for satisfying a crowd or warming up on a chilly day.

Ingredients

  • 10 lb. coarsely ground beef
  • 1 1/2 lb. onions, peeled and quartered
  • 1 1/2 tsp. paprika
  • 2 1/2 lb. suet off the kidney
  • 1/2 lb. chili pods, seed removed
  • 1/4 lb. garlic buttons, peeled
  • 1 1/2 Tbsp. cumin powder
  • 2 Tbsp. salt

Instructions

  1. Cook the ground beef in a large pot.
  2. Sprinkle the beef with salt.
  3. Pour 1 pint of water over the salted beef.
  4. Cook for 1 1/2 hours until the meat is tender, stirring often and maintaining low heat.
  5. Grind and render the suet off the kidney, then strain and let cool.
  6. Grind the chili pods, onions, and garlic twice.
  7. Use the chili plate to grind the chili pods, then the sausage plate for the onions and garlic.
  8. Once the meat is tender, pour the rendered suet over it and stir, cooking for 5 more minutes.
  9. Add the ground spices and dry spices on top of the meat, letting them melt.
  10. Stir everything together and cook for an additional 5 minutes until flavors meld.
