Buttermilk Cinnamon Bread

- Preheat oven to 350°F (175°C). Spray two loaf pans or five mini-loaf pans with cooking spray and set aside.
- Combine cinnamon and 1 cup of sugar; set aside.
- In a large mixing bowl, combine flour, baking soda, and salt; set aside.
- In a small bowl, combine vegetable oil and 1 1/2 cups of sugar.
- Add buttermilk and eggs to the oil and sugar mixture; mix well.
- Stir the wet ingredients into the dry ingredients just until moistened.
- Fill the two loaf pans about one-third full with batter.
- Sprinkle 1/4 cup of the cinnamon-sugar mixture over each pan of batter.
- Top with remaining batter and cinnamon-sugar mixture.
- Swirl batter with a knife to create a marbled effect.
- Sprinkle chopped walnuts on top.
- Bake for 45 to 55 minutes or until a toothpick inserted near the center comes out clean.
- Cool in pans for 10 minutes before removing to a wire rack.
