Ingredients

  • 4 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1/2 cup vegetable oil
  • 2 1/2 cups sugar, divided
  • 2 cups buttermilk
  • 2 eggs
  • 1 tablespoon ground cinnamon
  • 2 tablespoons walnuts, finely chopped

Instructions

  1. Preheat oven to 350°F (175°C). Spray two loaf pans or five mini-loaf pans with cooking spray and set aside.
  2. Combine cinnamon and 1 cup of sugar; set aside.
  3. In a large mixing bowl, combine flour, baking soda, and salt; set aside.
  4. In a small bowl, combine vegetable oil and 1 1/2 cups of sugar.
  5. Add buttermilk and eggs to the oil and sugar mixture; mix well.
  6. Stir the wet ingredients into the dry ingredients just until moistened.
  7. Fill the two loaf pans about one-third full with batter.
  8. Sprinkle 1/4 cup of the cinnamon-sugar mixture over each pan of batter.
  9. Top with remaining batter and cinnamon-sugar mixture.
  10. Swirl batter with a knife to create a marbled effect.
  11. Sprinkle chopped walnuts on top.
  12. Bake for 45 to 55 minutes or until a toothpick inserted near the center comes out clean.
  13. Cool in pans for 10 minutes before removing to a wire rack.
