Ingredients

  • 3/4 cup butter, softened
  • 1 1/4 cups sugar
  • 2 eggs
  • 3 cups sifted flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 cup water
  • 6 oz. package butterscotch chips, melted
  • 1 cup grated carrots
  • 1 cup raisins

Instructions

  1. Preheat oven to 350°F (175°C). Line two 8-inch round pans with waxed paper.
  2. Cream softened butter and sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition.
  4. In a separate bowl, sift together flour, baking powder, baking soda, cinnamon, nutmeg, and ground cloves.
  5. Gradually add the dry ingredients to the creamed mixture, alternating with melted butterscotch chips and 1/2 cup water, mixing well after each addition.
  6. Stir in grated carrots, raisins, and applesauce until evenly combined.
  7. Divide the batter evenly between the two prepared pans.
  8. Bake for 35 to 45 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow cakes to cool before removing from pans and frosting as desired.
