Ingredients

  • 2 lb pork sausage
  • 1 lb ground beef
  • 1/2 loaf whole wheat bread
  • 3 eggs
  • 1 medium onion
  • salt to taste
  • pepper to taste

Instructions

  1. Select a large loose leaf head of cabbage, wash and take apart keeping it whole.
  2. Parboil cabbage leaves in salt water a few minutes until it wilts. Drain in a colander.
  3. Keep the small center for the heart of the loaf.
  4. Toast the whole wheat bread and crumble it into small pieces.
  5. Chop the medium onion finely.
  6. In a mixing bowl, combine the ground pork, ground beef, toasted bread, eggs, chopped onion, salt, pepper, allspice, and nutmeg.
  7. Mix well until all ingredients are evenly incorporated.
  8. Line a loaf pan with cabbage leaves, reserving some for the top.
  9. Press the meat mixture into the prepared pan, shaping it into a loaf.
  10. Cover the top with the remaining cabbage leaves.
  11. Bake in a preheated oven at 350°F (175°C) for about 60 minutes or until cooked through.
  12. Remove from oven, let rest for a few minutes, then serve.
