Cabbage pillows are tender cabbage leaves stuffed with savory beef and rice, baked in a tangy tomato sauce, perfect for comforting family dinners and hearty appetites.

Ingredients

  • 1 large head cabbage
  • 1 lb ground beef
  • 1 egg
  • 1 small onion
  • 1 cup instant rice
  • 2 cans (about 32 oz) tomato wedges
  • 1 quart sauerkraut
  • salt and pepper

Instructions

  1. Heat cabbage leaves in boiling water for a few minutes until they are soft enough to roll, or microwave 4 or 5 leaves at a time for about 1 1/2 minutes to soften.
  2. Mix together ground beef, rice, egg, and chopped onion. Season with salt and pepper to taste.
  3. Place a small amount of the beef mixture on a cabbage leaf, then roll up and seal the ends with a round toothpick.
  4. Repeat until all the rice mixture is used.
  5. Spread sauerkraut in the bottom of a small roaster or baking dish.
  6. Arrange the cabbage pillows on top of the sauerkraut.
  7. Pour canned tomato wedges over the cabbage pillows and sauerkraut.
  8. Cover and bake at 350°F (175°C) for 30 minutes.
  9. Uncover and continue baking for another 30 minutes.
  10. If the sauerkraut is very dry, add a little tomato juice as extra liquid before the final baking period.
