  • 3 c. sliced carrots
  • 2 Tbsp. tomato paste
  • 1 Tbsp. minced garlic
  • 1 tsp. minced fresh rosemary
  • 2 c. frozen pearl onions

Instructions

  1. Combine coarse ground garlic, dried fines herbes, and pepper. Sprinkle over the beef steak pieces.
  2. Coat a large nonstick skillet with Pam and heat over medium-high heat until hot.
  3. Add the marinated beef steak to the skillet and cook until browned on all sides, stirring frequently.
  4. Transfer the browned beef to a 4-quart casserole dish.
  5. In the same skillet, add sliced carrots, pearl onions, minced garlic, tomato paste, and minced rosemary. Cook briefly.
  6. Add 2 cups of beef broth and red wine to the skillet, scraping up any browned bits.
  7. Pour the mixture over the beef in the casserole.
  8. Stir in remaining beef broth and flour, then cover and simmer until beef is tender, about 1.5 to 2 hours.
  9. Serve hot, garnished with fresh herbs if desired.
